The complexity of the design will depend upon the age and ability level of the students. From what I read, I found Deskins' book highly readable. It is also the most crucial level for developing conceptual understanding of math concepts/skills. I intend to cover Chapters I-IV of Hungerford, plus section 7 of the Introduction (on Zorn's Lemma), which we'll defer till the first time we need it, plus about the first half of Chapter V.
